Yin & Yang Cookies

We’ve been making these little Yin & Yang cookies lately because life has thrown us a few lemons - and sometimes, what you need most is a little more Yin and Yang in your life.  Life is full of opposites: light and dark, sweet and bitter, soft and crunchy, beautiful days and the ones that test us.

 

Just like these cookies, it’s often the contrast that makes the whole thing magical. And honestly, are you as mesmerised by those chocolate-and-vanilla swirls as I am? There is something almost hypnotic about watching the two sides come together.

 

I love using Loco Love chocolate drops in these cookies - they create that beautiful chocolate magic without the heaviness of classic sugary chocolate. The creamy vanilla and rich cacao dough complement and enhance each other perfectly, reminding us that perhaps we don’t need to choose between the light and the dark: we need both to create the whole picture. So when life gives you lemons, bake some cookies & find your balance.

 

INGREDIENTS:

Vanilla & Macadamia Dough

  • 125 g unsalted butter, softened
    or vegan butter for a dairy-free version
  • ½ cup light coconut sugar, or monk fruit sweetener to taste
  • 1 egg
    or a vegan egg replacer
  • ½ teaspoon vanilla extract
  • 1½ cups almond flour, approximately 150–160 g
  • ½ teaspoon sea salt
  • ½ cup roughly chopped macadamia nuts
  • pinch of baking powder

Chocolate Dough

  • ½ of the vanilla dough
  • ¼ cup unsweetened cacao powder
  • ½ cup Loco Love Mylk Chocolate Drops, roughly chopped

To Finish

  • Extra macadamia nuts
  • Extra Loco Love Mylk Chocolate Drops

 

 

Method:

Start by making the vanilla dough. Place the softened butter and light coconut sugar in a bowl and beat with an electric mixer until creamy and well combined. If using monk fruit, add it gradually and taste the mixture to achieve your preferred sweetness.

Add the egg and vanilla and beat until smooth. For a vegan version, use your preferred egg replacement.

Add the almond flour and sea salt and mix until a soft dough forms.

Divide the dough into two equal portions and place one portion into a separate bowl. Add macadamia nuts into one of the dough 

To make the chocolate dough, add the cacao powder to one portion ( without macadamia ) and mix until evenly combined. Fold through the Loco Love Mylk Chocolate Drops.

Place each dough onto a piece of baking paper. Shape each into a long log, approximately 4 cm in diameter. Wrap and refrigerate for at least 1 hour. If you are short on time, you can place them in the freezer for about 20–30 minutes.

Once chilled, gently press one side of each log with your fingers so that the cross-section becomes slightly teardrop-shaped. This will create the two curved sides needed for the yin-yang pattern.

Place the vanilla and chocolate logs together, fitting the curved sides into each other to create the yin-yang shape. Wrap the combined log tightly in baking paper and refrigerate for another 30–60 minutes until firm.

Preheat the oven to 175°C and line a baking tray with baking paper.

Using a sharp knife, carefully slice the chilled log into approximately 20–24 cookies. If the chocolate or macadamia pieces make slicing difficult, use a sharp knife and gently saw through them rather than pressing down too hard.

Place the cookies onto the prepared baking tray, leaving space between each one. Use chopped macadamia to decorate the cookie on the chocolate side and Loco love drop on the white side.

Bake for approximately 10–12 minutes. Because almond flour browns quickly, keep an eye on them. They should look set around the edges but still be slightly soft in the centre.

Remove from the oven while they are still soft and warm.

Allow the cookies to cool on the tray for 10–15 minutes before transferring them to a cooling rack. They will firm up as they cool.

 

A little kitchen wisdom:

I love this version because the almond flour gives the cookies a naturally nutty richness, while macadamias add beautiful crunch and nourishing fats. Using coconut sugar or monk fruit keeps the sweetness gentler, and the Loco Love chocolate brings a lovely richness without needing conventional white chocolate.

The result is a little yin and yang of its own - creamy and crunchy, vanilla and cacao, sweet and earthy.
