
REFINED SUGAR FREE
A rich and velvety chocolate mousse designed to nourish both body and spirit. Made with our Dark Chocolate Drops and crowned with our new Double Chocolate Truffle, this refined sugar-free creation is an invitation to slow down and savour life's little luxuries.
This is pleasure, the Loco Love way.
INGREDIENTS.
170g (1cup) Loco Love Dark Chocolate Drops
110g (½ cup) extra virgin olive oil
4 Large eggs, at room temperature and separated
¼ tsp salt
1 tsp vanilla extract
¼ Cup maple syrup
1 Double Chocolate Truffle bar (optional, for topping)
METHOD.
- Add chocolate to a heat proof bowl and sit over a saucepan of boiling water. The bowl should not be touching the water. Reduce heat to low. Heat the chocolate until almost melted. Remove from the heat and mix and smooth and runny. The chocolate shroud not be hot- only warm. Allow to cool if necessary.
- Slowly stream the olive oil into the chocolate while mixing constantly, mixing until uniform. Set aside.
- Separate the eggs whites and egg yolks into two bowls.
- In a large mixing bowl add egg whites and a pinch of salt. Beat to form stiff peaks. Set aside.
- In a separate mixing bowl add the egg yolks, ¼ tsp salt, vanilla and maple syrup. Beat the mixture until thickened and pale- this will take about 2 minutes.
- Pour in half of the chocolate mix (make sure it is close to room temperature by now) and gently fold through. Add the remaining chocolate and repeat.
- Working with 1/3 of the beaten egg whites at a time, add to the chocolate mix. Gently fold through, using the spatula to smear the egg whites around the bowl and through the centre. Once the whites have all been added and mixed through fold through a few more times, ensuring all the eggs are mixed well. Try to not over mix.
- Spoon into 4 small ramekins or glass jars.
- Set in the fridge 6+ hours, or cover with cling wrap and and freeze for 2 hours for a quickset option.
- To serve, topped with thickened or whipped cream, a drizzle of olive oil and a sprinkle of sea salt. For an extra topping, we chopped up LocoLove Double Chocolate Truffle and sprinkled on top.
